My grandmother was named Anita. She was my father’s mother and lived to the age of 94. From my earliest childhood memories, she was always cooking good food. All the adults used to call my grandmother Nita for short. My oldest cousin will tell you that when she was just learning to talk and she her one of my grandmother’s friends call her Nita. She would correct them and say no “My Ta” which became Mata and hence she was always Mata to all her grandchildren.

Making homemade graham cracker crust is as simple as 1 . . . 2 . . . 3 ingredients.

1 1/2 cups graham crackers, crushed
1/4 cup sugar
1/3 cup butter, melted

Directions

In a small bowl, combine the crumbs and sugar; add the butter and blend well. Evenly press crust into the bottom and up the sides of an ungreased 9-inch pie plate.

Using the unbaked crust: Refrigerate crust for 30 minutes before adding the filling.

Using the baked crust: Bake for 8 to 10 minutes at 375 degrees until crust is lightly brown. Cool on wire rack before filling.

HOW TO BLANCH ALMONDS

Put the almonds into a saucepan, cover with cold water, and bring to boiling-point; then remove from the fire. Drain and run cold water over them. Turn out on a coarse cloth and rub off the outer skins. Blanched almonds may be cut lengthways in shreds or strips, or they may be cut crossways in thin slices. They may be chopped by cutting across several times. Collect the pieces in a chopping bowl or on a chopping board, and with a broad-bladed knife or a chopper chop them as coarse or as fine as required. To split almonds, insert a pointed knife at one end and the nut will split in two.
